Rice with Peas & Asparagus Tips

Summer is on the way!  This is a great meal for hot weather because you don’t have to turn on the oven. It is a well-balanced  and nutritionally sound dish.

4 cups stock (chicken or veggie)

1/2 cup brown ricediet generator

1 pound asparagus, clean & cut hard stem off

1 cup fresh peas

2 tbs olive oil

4 tbs freshly grated Parmesan cheese

Bring stock to a boil. Then add rice, bring once more to a boil then lower flame to a simmer for 10 mins. Cut asparagus into 1 inch pieces. Add peas & asparagus, bring once more to a boil, then lower the flame immediately and continue cooking for 10 minutes more. Now add oil and half of the grated cheese. Spoon into serving bowls & add the remaining cheese on top and serve hot.

Notes;

You can alter this reciepe to suit your needs. You can add different veggies, chicken, beans, tofu, etc…

Depending on the tpye of rice you use your cook time will vary.
