Restaurant Style Quesadilla

Eat at home with this low cost, high in protein, calcium and vitamin’s, simple and delicious quesadilla. This makes for a great lunch or light dinner served with a side salad.

2 Whole grain tortillas

2 tablespoons of bean dip

Options; dice tomatoes, broccoli, red peppers, onions, mushrooms, etc….

You can dice your veggies up or use a food processor.

 Preheat oven to 375.

Lay out your tortilla’s, spread the bean dip on each, add the tomatoes and other veggies, then (LIGHTY) top with shredded Monterey Jack chesse .

Use the second whole grain tortilla to place over the top of each and bake for about 3-5 minutes until cheese is melted and tortilla is lighty brown around the edges.

Cut the quesadilla like a pizza and serve with salsa and non-fat sour cream if desired.
